granola

Granola like you buy in the stores, but customizable, cheaper (in the long run), and better. Mmmm!

4 C rolled oats 1 L
1 C sliced almonds 250 mL
1/2 C unsweetened coconut 125 mL
1/2 C sunflower seeds 125 mL
1/2 C wheat bran 125 mL
1/2 t cinnamon 2 mL
1/2 C brown sugar 125 mL
1/3 C honey or maple syrup 75 mL
1 C chopped dried fruit 250 mL

In a large bowl, combine the oats, almonds, coconut, sunflower seeds, wheat bran, and cinnamon.

In a saucepan, combine the brown sugar and honey or maple syrup. Bring to boil. Toss with oat mixture. Place granola on a large baking sheet lined with parchment paper or lightly oiled foil. Bake in 325 F / 160 C oven for 35 to 40 minutes, or until lightly toasted. Place a second piece of parchment paper or oiled foil on top of the granola and cover with second baking sheet. Turn, remove first baking sheet and paper, and bake for 10 to 15 minutes longer.

Break up granola and cool. Stir in dried fruit. Store in an airtight container.

Makes 6 cups / 1.5 L
