jenny's pancakes

from jenny lunstead

  • 3/4 C dry
    • 1/4 C white flour
    • 1/4 C wheat flour
    • 1/4 C wheat germ
  • 3/4 C wet
    • buttermilk (or 1 part water to 1 part yogurt)
    • 1 T cooking oil
    • 1 egg
  • 1 t baking powder

If you don't have all of the ingredients, just combine to make up the difference (if there's no wheat germ, use more wheat flour, or something). Mix. Put in fruit, maybe a cup or 1.5 C? Blueberries are absolutely fantastic in these; Jenny says bananas work quite well, too. Cook in small pancakes.
