mom's fried rice
dictated from mom, as she's running out the door:
- a little butter or oil for sautéeing
- scrambled egg
sauté some onion
reasonable amount of fresh ginger, chopped up -- it's in the freezer
oh and garlic, too
if i'm doing it i usually use some butter, but, you know, oil
finish onion, ginger, and garlic with a little sherry -- pour in a little; boil it off
add in rice, turn it around, add soy sauce "to taste", usually it's colored brown so i color it brown
then i usually add some scrambled egg on the side, cut up and put it in, add some frozen peas if you want.
in other words it's "how to use up leftovers."
add some dark sesame oil if you like, in the fridge, way back in the fridge.
