vodka sauce

  • 1 large red onion
  • butter
  • 1 can crushed tomatoes
  • fresh diced tomatoes
  • 3/4 pint heavy cream
  • 1 cup vodka
  • crushed red pepper
  • salt
  • basil (fresh and dry)
  • garlic (fresh and dry)

  1. drown crushed red pepper in vodka and set aside (i use a lot -- i like it hot)
  2. sautee onion and fresh garlic in butter with dried basil and salt
  3. add vodka mixture once onions are clear
  4. boil off most of the vodka
  5. once the vodka is mostly boiled away, add the crushed tomatoes, some salt, garlic powder, half the basil, and simmer/cook for a while
  6. after things are getting warmed, add in the diced tomatoes for texture/freshness and the rest of the basil
  7. towards the end, add heavy cream til you get a nice pink color ... should be another 5-10 minutes of simmering to the end
  8. oh, and spice to taste...i add a lot of random shit while i cook...salt, pepper, red pepper, garlic, basil...and there just is no good way to quantify that...im sure you understand...

a lot of the recipe is guesswork and using your judgement.
